I’ve been seriously craving everything cinnamon sugar and these cinnamon toast waffles did not disappoint!
Anyone used to love the cinnamon crunch bagels from Panera? I wanted to live on those bagels in high school.
And no, these waffles are really nothing like those bagels, BUT they popped into my head. Plus anything breakfast-y is just perfect with a little extra cinnamon sugar, right?
They’re buttery delicious and sprinkled with extra cinnamon and maple sugar (or coconut sugar). And if you love topping your waffles with everything then you’re in luck, because these waffles are awesome with all the extras.
A drizzle of maple syrup, dollop of whipped cream, and sliced bananas were perfect for me!
What You Need to Make Cinnamon Toast Paleo Waffles
Super simple ingredients make the best waffles! Here’s what you’ll need to prepare the recipe:
EggsCanned coconut milkGhee or refined coconut oilMaple sugar or coconut sugarPure vanilla extractCoconut flourTapioca flourBaking powder, aluminum freeBaking sodaGround cinnamon Fine sea salt
How to Make Cinnamon Toast Paleo Waffles
In a mixing bowl or large measuring cup, combine all the dry ingredients and whisk.
In another bowl, whisk together the eggs, coconut milk, sugar, coconut oil and vanilla, then pour this mixture into the dry ingredients and mix by hand until well combined.
Heat your waffle iron and brush or spray it well with coconut oil or cooking spray. Pour the batter into the waffle iron gently spreading just a bit before closing. Cook waffles according to your waffle iron’s instructions. This recipe will make about 4-6 servings but may vary depending on your iron.
For the cinnamon sugar topping, mix together the sugar and cinnamon in a small bowl. Once done, brush waffles with melted coconut oil or ghee and dust with the cinnamon sugar mixture. Top with fruit, maple syrup, whipped cream etc. to serve.
How to Freeze These Cinnamon Toast Waffles
I love that you can make these waffles ahead of time, freeze them, and then pop them in the toaster oven for an easy breakfast. Perfect for the kids!
After baking them in the waffle iron and cooling slightly, wrap the waffles in a single layer in parchment or plastic wrap and freeze.
Do this without the extra cinnamon sugar topping. You can defrost them in the toaster oven, then brush on the ghee or coconut oil and sprinkle with extra cinnamon sugar.
Then just top them as desired and enjoy!
