These easy one bowl paleo and vegan brownies are gooey and fudgy and of course loaded with chocolate x 3! They’re free of refined sugar, dairy, grains and eggs and perfect to indulge your chocolate craving whenever it hits.
This recipe is a spin on my old favorite triple chocolate paleo and vegan brownies!
The recipe is updated and simplified to prepare all in one bowl.
So you’re THAT much more likely to make them – which is of course a very good thing!
They’re ridiculously fudgy and packed with chocolate, of course!
Plus, they keep well both in the refrigerator and freezer, which means you can grab a treat whenever a craving hits.
What You Need to Make these One Bowl Brownies
If you’re familiar with paleo baking, you’ll find that this recipe uses many of your staples.
For chocolate, I like Evolved Chocolate or Hu Kitchen for paleo and vegan friendly.
Here’s everything you’ll need to prepare the brownies:
ground flaxseed mealbittersweet chocolatealmond or cashew butterrefined coconut oilcoconut sugar or maple sugarpure vanilla extractblanched almond flourraw cacao powder or unsweetened cocoa powderbaking sodasea saltdark chocolate chips or chopped dark chocolate
How to Make these Paleo and Vegan Brownies
Prepare the flax eggs* as described in the ingredients and preheat your oven to 350° F.
Line an 8 x 8” square baking pan with parchment paper on the bottom and up the sides.
Place the bittersweet chocolate In a large microwave safe bowl. Melt in the microwave in 30-second increments, whisking after each, until completely smooth.
Whisk in the nut butter, coconut oil, sugar, vanilla, and flax eggs.
Add the almond flour, cacao powder, baking soda and salt to the chocolate mixture. Mix well to fully combine.
Transfer the batter to the prepared baking dish and sprinkle the top with the chocolate chips. Bake in the preheated oven for 20-22 minutes or until just set in the center.
Allow the pan to cool on a wire rack to room temperature. Allow the brownies to cool completely before cutting into squares.
Tips for the Fudgiest Paleo and Vegan Brownies
How you cool and store these brownies makes a big difference in their texture.
Chilling in the fridge or freezer will bring out the fudgiest texture and make them easier to cut as well!
I like to cool them completely, then chill for at least 30 minutes before cutting.
They’re best stored in the refrigerator or freezer, to keep longer.
How to Sub in Real Eggs
If you’d prefer to use real eggs instead of flax eggs, sub in one whole egg and one yolk for the best texture.
