A dip that’s basically a full meal is game day heaven, in my opinion, and that’s exactly what we have here with this paleo chicken taco dip! I know I say this a lot, but this dip REALLY gives you all the good stuff.
Can you say guacamole layered with taco-seasoned chicken, chipotle ranch sauce, salsa, shredded veggies and jalapeños? Forget the cheese, the creaminess and flavor of this dip is out of this world. Trust me, it’ll be love at first dip 🙂
Maybe the best part of this recipe is how quick and easy it is (as long as you have your chicken cooked ahead of time.). It’s all prep and no-cook!
We start with an easy guacamole, followed by shredded chicken tossed in a spicy taco-seasoned sauce. Then we have my favorite chipotle ranch sauce, which has tons of flavor and is incredible all on its own.
Top that with your favorite salsa, shredded brussels sprouts (or lettuce, or cabbage) and sliced jalapeños for extra spice.
I decided to go with shredded brussels sprouts since I’m totally Brussels-obsessed but any shredded veggie would work really well to top of this dip. It’s ready and waiting for your favorite fresh cut veggies, baked fries, or tostones!
From start to finish, the prep is about 20 minutes since each component (or layer) of the dip is easily mixed together.
The combination of the spicy shredded chicken, creamy guacamole, flavor-packed ranch and salsa plus the veggies on top make this dip satisfy all your cravings at once! It’s filling enough that you could really eat it all on it’s own and make it a full meal, which I definitely did after shooting these photos.
If you serve it with fresh veggies, this loaded paleo chicken taco dip is also keto friendly and Whole30 compliant. It’s quite the epic appetizer but can really be made anytime you want something tasty, fun, spicy, and filling!

Ingredients
Chicken:
2cupschicken breasts cooked and shredded1/4cupavocado oil or light olive oil1/2tspsea saltJuice of 2 small limesabout 1 1/2 tbsp2tspchili powder1/2tsponion powder1/2tspgarlic powder1/4tspchipotle powder1/2tspcumin
Guacamole:
2avocados1/4cuponionminced2clovegarlicminced1med jalapeno pepperminced2Tbspfresh lime juiceor to taste2Tbspchopped fresh cilantroplus more for garnishSea saltto taste
Chipotle ranch:
1cuphomemade mayo2tspfresh lime juice or lemon juice1tsponion powder1tspgarlic powder2tspdried chives1/2tspchipotle powder1/2tsppaprika
Additional Ingredients:
1/2cupsalsacompliant1/3cupShredded Brussels Sprouts Or lettuce, or cabbage2-3Jalapeño peppersthinly sliced Additional cilantrofor garnish, if desired
Instructions
To prepare the chicken, whisk together the oil, salt, line juice and spices in a bowl until fully combined, then toss with the shredded chicken.Prepare guacamole by mashing all ingredients together. For the chipotle ranch, whisk together all ingredients in a small bowl.
Assemble the dip: In an 8 x 8 dish (or comparably sized dish/container) layer the guac, chicken, chipotle ranch, salsa, shredded Brussels sprouts, jalapeno, and any additional cilantro.
Serve immediately with fresh cut veggies, sweet potato fries or tostones. Store leftovers in an airtight container in the refrigerator for up to 3 days. Enjoy!
